about NOCO DISTILLERY

Our micro distillery is located in Fort Collins, Colorado, at the foothills of the Rocky Mountains, where we source our pristine alpine water. We exclusively use copper stills, including both column and pot stills. Some of our fermentation process lasts over a month, ensuring a rich and complex flavor profile. By utilizing a slow distillation process, we enhance reflux and copper contact, resulting in a smoother spirit through meticulous smaller cuts. We also distill a minimum of 3 times (triple distill) our spirits.

We age our premium craft spirits in some of the finest American oak casks, employing barrels of various sizes (5, 10, 15, 30, 53, and 100 gallons). The staves for our casks are seasoned for 12 to 48 months, depending on our suppliers. Additionally, we incorporate up to nine other types of wood for finishing, primarily for our rums and agave spirits. This unique approach places us among the few distilleries that operate this way, positioning us at the forefront of the maturation/finishing process.

Today, we distill over 25 different products, making us one of the most versatile craft distilleries globally.

Socially Responsible Operations

We at NOCO Distillery believe in doing business that benefits not only us but the rest of the community as well.

We outsource what processes we can to other local companies. For instance, we contract some of our wash to local breweries and complete the fermentation in our distillery. Which is not only efficient but also produces more work for the local community.

As much as possible, we source raw materials from local producers. Much of the botanicals, fruits and grains we use in our craft spirits are produced right here in Colorado. By doing so, we reduce our operation’s carbon footprint; locally sourcing raw materials means a shorter distance to travel and thus lesser fuel consumption. It also maximizes our positive impact on the local economy. By purchasing from local businesses, we increase the income of local producers. This, in turn, provides locals with more work opportunities, directly or indirectly increases' locals' spending power (which boosts the local economy even more), and increases the government's tax earnings — the Colorado proud way.

We also believe doing business and protecting the environment need not be mutually exclusive. Thus, we try to reduce the impact of our operation on the environment. We recycle or reuse most of everything we use in crafting our premium spirits. We also strive to be energy efficient; for instance, we use heat exchangers so that we can preheat succeeding batches, also use heat exchangers to heat the warehouse while distilling, which reduces our overall energy consumption significantly. During the winter months, we use a closed-circuit cooling system with water reclaimed from our Reverse Osmosis system. We also offer a recycle & reuse program where we provide a $0.50 credit for each bottle returned to us. We are apparently the only distillery in Colorado to offer it.

Finally, we strive to use organic or Non-GMO raw materials, when possible, which, of course, depends on availability from our suppliers and will be indicated on our bottles.

ROCKY MOUNTAIN Water

The Rockies are a mountain range formed through the subduction of tectonic plates millions of years ago. It is more than 3,000 miles long and is located at the western part of the North American continent. The Rocky Mountains are shared by Canada and the United States, stretching from British Columbia to New Mexico.

The Rocky Mountains play a significant role in Colorado's craft beer industry. It supplies clean and clear spring and runoff water that Fort Collins brewers swear by. It is this water from the Rocky Mountains that brewers often credit for their beers' award-winning taste.

Noco Distillery is using the same high-quality Rockies water in its craft spirit distillation. And we're sure this very same Rocky Mountains water that gives so much character to Coloradoan brews gives our premium craft spirits an edge in taste and flavor.

WHY Fort Collins?

Fort Collins is situated on the foothills of the Rocky Mountains, and the "Wild and Scenic River" of Cache la Poudre (with a reputation for great whitewater rafting) runs through it. It is home to Colorado State University, it is the seat of Larimer County and, in terms of population, it is Larimer County's largest municipality.

Fort Collins is perhaps best known for being the "Craft Beer Capital of Colorado." Twenty plus breweries call it home. Additionally, approximately 70% of all beers produced in Colorado come from Fort Collins.

And soon - through the many local craft micro distilleries such as ours - we hope to put Fort Collins on the map of one of the America's great craft spirit capital as well.

Our Speakeasy & tasting room has a unique vibe and is located in the industrial area of Fort Collins off of S. Link Lane. We are normally open Wed from 5pm to 8pm and Fri-Sat from 4pm to 8pm.

Groups are welcome. Please contact us if you plan to come as a group so that we can prepare in advance so that you don’t overlap with other groups. You can make reservations as well.
